20 ideas for dishes and desserts

I’m sure you’ve already thought about what to cook on the holidays. And I’m sure you want something new. In this article, I shared delicious ideas – how to cook quickly and easily, than to please loved ones. And my main advice is to experiment!

Salads

Okay, let’s start with the salads. Classic is a favourite of many, but you can cook it in a new way. You can make a variation on Olivier by replacing some products with similar ones.

Tip number one. Potatoes, beets and carrots can be cooked in advance, and even more delicious if you bake vegetables with oil and spices. Cut them into large slices before baking, and then cut the finished vegetables as you like.

Tip number two. Sausage and red meat can be replaced by a lighter turkey or chicken (they also taste better baked), and for the vegetarian version, white and red beans are suitable – drain the liquid from a jar and lightly fry the beans with butter and chopped garlic, cool and add to the salad.

Tip #3. Instead of mayonnaise, prepare a delicious homemade sauce: mix sour cream or yogurt with mustard and your favourite butter. Olive, mustard, hemp and sesame sauce will do perfectly. Add some lemon juice and mix thoroughly, try and add some of the ingredients for balance (there are no strict recipes here, be guided by your taste). Don’t you like dairy? Use coconut milk/cream by adding the same ingredients. It’s also delicious to add finely chopped herbs – parsley, oregano, basil, mint.

By the way, ready-made sauce will also do – for example, natural mayonnaise, cheese sauce or caesar.

Tip number four. Add to your version of Olivier something fresh – for example, cucumbers, salad leaves of any variety or Chinese cabbage. The freshness and pleasant crunch will make the salad taste better.

What salads do you want me to make?

Here are some ideas – complete them with fresh herbs and salad leaves, as well as your favorite oil with lemon juice or natural sauce. Experiment and rely on your taste.

  • Feta/brynza + cherry + sweet pepper + olives
  • Feta/brynza + salad mix + green peas (you don’t need canned but frozen – warm it for 2-3 minutes with oil and salt).
  • Tofu + cucumbers + olives (a sauce with a bright flavour, such as honey and mustard, will do)
  • Fresh cauliflower + tomatoes + walnuts
  • Apples + dried tomatoes + arugula + favorite nuts
  • Tinned beans + dried tomatoes or cheese with smoked flavor + nuts or homemade crackers
  • Canned beans or tofu + pickled cucumbers + nuts or seeds
  • Baked beet + Feta or bryndza + cucumbers
  • Grapefruit + olives + boiled chickpea
  • Thinly chopped cabbage + sweet pepper + soy sauce

Garnishes

If you want potatoes, you can bake them with a mix of vegetables and spices, making a full dish!

We make a delicious mix. Suitable beets, pumpkin, yam, carrot, zucchini, sweet pepper – use 2-3 kinds of vegetables. And be sure to add a sour-sweet apple or a handful of cowberries – everything should be baked together. Just cut the vegetables into large slices, add salt, oil and spices – ground coriander, curry, freshly ground pepper, of course, smoked paprika, dried garlic, dried tomatoes and any mix of spices will do. Fresh thyme + rosemary will also be great – use only needles. Bake vegetables for 20 minutes at a high temperature of about 220 C and serve immediately.

The second option: bake vegetables simply with salt, oil and pepper, and when served add sauce – tomato, sour-sweet, caesar, cheese, or you can make sauce from mustard, honey, butter and lemon juice. By the way, give the vegetables some sauces in beautiful bowls – so that everyone can try what he likes. Don’t forget to add fresh herbs – basil, mint or parsley – to the vegetables when serving.

Another option for fast and tasty side dishes is vegetable puree. Use two types of vegetables, for example:

  • Potatoes + cauliflower
  • Potatoes + broccoli or green peas
  • Potatoes + pumpkin or yam
  • Cauliflower + broccoli or green peas
  • Cauliflower + pumpkin

It’s simple: bake or put out vegetables with salt, butter and spices, put them in a saucepan, add some boiling water + cream or coconut milk, heat for a couple of minutes and grind with a blender. Separately fry garlic with leeks, or garlic with mushrooms – this will make the mashed potatoes taste better, as well as grated hard cheese, nuts and fresh herbs. And don’t forget the fragrant butter – pumpkin, sesame, olive, etc. Cream butter will do for the classic rich taste.

Desserts

What a holiday without desserts! In order not to fall asleep immediately after the chime fight, and after the January holidays did not have to immediately run to the gym and throw away the calories eaten, let’s approach the sweet sensible 🙂

Panakota and jelly

The first and easiest is cold desserts without baking. It is based on agar agar or gelatin plus liquid. For example, to prepare coconut panakota for 2 servings, you will need:

  • coconut milk or cream: ~ 300 ml
  • water: ~ 150 ml
  • agar agar: 2 hours. l.
  • honey or syrup: 1 tbsp.
  • If desired: with a pinch of cinnamon, ginger or cardamom for serving: jam, fruit or berries, chocolate sauce (use what you like)

It’s simple: pour milk and water into the saucepan, add spices and agar agar, heat on medium heat almost until boiling, stirring. Pour into small transparent glasses or bowls, put them away in the fridge for about 2 hours, overnight if it is more convenient for you. When serving, add jam or fruit, nuts, chocolate – whatever you like.

Chocolate baking

It’s probably the most delicious kind of baking, isn’t it? The first rule is to use the highest quality dark chocolate and cocoa without any additives, and instead of raffinade – coconut sugar, cane, dark honey or syrup. To make the chocolate flavour shade, add a pinch of salt and a sour accent to the dough – for example, berries will be perfect for the muffin.

And if you like the perfect chocolate cookie, this recipe is for you:

  • whole wheat flour or oatmeal: 100-120g (can be mixed with regular flour)
  • cocoa without additives: 2 tbsp.
  • pinch of salt + teaspoon of leavening agent
  • coconut butter: 50-70 g
  • honey or syrup: 100-120 g
  • bar of dark chocolate
  • 2 eggs
  • optionally: spices and orange peel

Mix flour, cocoa, salt and leavening agent in a bowl. In a separate bowl, whisk soft butter with sugar or honey, add melted and slightly cooled chocolate and eggs, mix thoroughly with the mixer (alternatively, the chocolate may not be melted but crushed in a blender and added to dry ingredients). Add the dry ingredients to the wet ones and mix gently – first with a spoon, then with a mixer.

Make a tray with parchment and spread cookies with two spoons (this is more convenient), gently leveling. If desired, sprinkle the biscuits with chopped nuts – it will be very nice. Send a baking tray in a heated oven and bake cookies for about 10 minutes at 180C. Cool the ready biscuits on the baking tray first, then place them on a dish.
